Sunday Lessons: Might Have JOY


Several weeks ago I taught a lesson about the purpose of life at church to a group of Young Women.

Through teachings of the gospel of Jesus Christ I have gained the knowledge that the purpose of life is really quite simple.

Men are that they might have joy and true joy is being able to return to live with our Father in Heaven.

We talked about how the purpose of life is to prepare to live with our Father in Heaven. Living in such a way will bring us true joy.

True joy, not what I call having a piece-of-chocolate-happy. That is the kind of happiness in the moment, but that can go away super quick.

True joy is forever kind of joy. How awesome is that?!?

We are here to gain a FOREVER kind of joy.


I wanted to make a fun hand out for the girls to remember the main message of the lesson.

I bought some Almond Joy candy bars and made up some tags to tape to them. I taped the tag right in front of the word "joy". The tag says "Men are that they might have..."

So all together the hand out says, "Men are that they might have JOY".


I made up a sheet of the tags that you can download and use for a hand out. Save it to your computer. Print out and tape it to regular sized Almond Joy candy bars.

Slow Cooker Saturday: Sweet Pork Baked Taquitos

Okay kidding. You don't have to sing, unless you really want to, then you can. You can make me feel better for once gain quoting a movie...although really who can't quote at least a little bit from So I Married an Axe Murderer.

So many gems all from the same movie.

I won't digress and quote them all.

I will get right to why you all come around on Saturdays...

Well, I am assuming that is why you come around on Saturday.

I guess you could come for my random and sometime unrecognizable movie or song quotes.

You could be stopping by for a dose of my witty repartee...I can be a hoot sometimes. At least I crack myself up.

Yeah, I am gonna take a chance and say you are here for the recipe.
 

Definitely the recipe.

Today's recipe is so dang yummy. SO yummy.

Wait, is it yummy?

Why yes, yes it is.


I got two thumbs up from the boys. Hubby couldn't stop sneaking bites of the meat, which was heavenly so I can't blame him.

The ingredients are basic, simple and few. Just how I like it.

The result is delicious, yummy, delectable...

Redundant much?

I just am trying to tell you guys how great this is.

So, it was yummy.

You throw the meat in the slow cooker in the am. Shred it when it is done. Wrap it up in a tortilla and sprinkle some cheese on top. Then bake it until golden and crispy.

Serve with ranch or sour cream.


Kind of perfect.

And I only say kind of because it could only be perfect if it was calorie free and I could eat five without the repercussions of more junk in the trunk.

Sweet Pork Baked Taquitos (Slow Cooker)
recipe via Sugar n' Spice Gals


Printable Recipe

3-4 pound pork roast
1 cup salsa
1 cup brown sugar (dark or light)
1 cup coca cola
black pepper
12-16 flour tortillas
2 cups shredded Monterey jack cheese
ranch or sour cream, for dipping

Put the pork roast in a slow cooker and season the top with black pepper.

In a small bowl, mix salsa, brown sugar, and cola. Whisk until well combined.

Pour mixture over the roast. Cover and cook on low for 6-8 hours (or high for 4).

Once cooked, remove pork from slow cooker and shred. Place the pork back in the sauce and cook for another 30-45 minutes.

Preheat oven to 375 degrees.

With slotted spoon, scoop out 1/4 cup sized portions of meat onto each tortilla. Roll up tight and place on a greased cookie sheet seam side down.

Sprinkle the tops with the shredded cheese.

Bake for 10 minutes, or until golden brown around the edges.

Serve with a side of ranch or sour cream.

Taco Casserole


This is a family classic.

I have had this meal for as long as I can remember. We had this all the time. It was a big having-company-over-for-dinner meal. I mean Tacos are a crowd pleasure and put them in casserole form and now they can feed a crowd.

I am pretty sure my family got pretty well known for this casserole. Kind of like a living legend, if I might say so.


When I first got married, I really only made this a few times. Mostly because two people don't so much need a whole casserole to themselves.

Plus one of the aforementioned two wouldn't classify herself as a casserole kind of girl.

Once our family got larger and our Little Men became bottomless pits and food vacuums Taco Casserole made the menu once again.

It made it back on the menu to the cheers of the boys (biggest boy included).

Quite literally, they actually cheer when they find out what I am making.


Nothing quite like gathering together as a family around a dish of love and tradition...

...scooping out a heaping helping...


...and eating a plate of Taco Casserole with my kids helping my memories become their memories.

This meal is insanely easy to make. Throw it together. Bake it for just a bit and then serve it up warm to the cheers and yums of your dinner table.

I sure hope you enjoy this family recipe as much as my family does.

Taco Casserole

Printable Recipe

1 pound lean ground beef, cooked
1 packet taco seasoning
1 can of turkey chili
6 cups tortilla chips, broken up
1 1/2 cup light sour cream
2 cups shredded cheddar cheese

Preheat oven to 350 degrees.

Cook ground beef in a skillet. Drain off fat if necessary. Season the hamburger with the taco seasoning. Add in the can of chili. Stir to combine. Set aside.

Place the broken-up tortilla chips on the bottom of a 9x13 baking dish. Layer the meat mixture on top of the chips. Next spread the sour cream over the meat mixture with a spatula. Sprinkle the cheese on top.

Bake in the oven for 20 minutes, or until the cheese is melted and casserole is warmed through.

Serve warm with a side of rice.

A Pinteresting Wednesday: Hard-Boiled Eggs in the Oven


Welcome to A Pinteresting Wednesday. The day of the week where I share a project I have accomplished or a tip I have tried off of one of my Pinterest boards.

This week I am actually sharing a pin I saw but never pinned. Don't ask me why.

Sometimes I am all like, "That looks cool. I can remember where to find that. Feeling too lazy to pin it." Then inevitably I do forget.

Then I am all like, "Hey Lady, why didn't you pin that. Didn't you remember your brain has the retention of a small gnat." 

Thank heavens Pinterest has a search field. Yippee.

On to Oven Hard-boiled Eggs.

Easter is very quickly approaching. Time to start thinking about Easter eggs.

I know plastic ones are so much easier. Plus you don't have to worry about losing one somewhere and facing a rotten egg weeks later. Especially if you are like us and more years than not it is too cold to go outside.

Rotten eggs in ones house is not a great thing.

However, I still can't help making traditional hard-boiled Easter eggs. For one thing, I get to eat hard-boiled eggs which I love. Then Hubby gets to make egg salad sammies...which I DO NOT love, but he does. Lastly, and MOST importantly, my kids get to dye Easter eggs, which they look forward to every year.

No, I did not make these eggs for Easter I am not that crazy...crazy yes, just not that crazy. I made these for our Seusstastical Celebration two weeks ago.

When making them, I followed the instructions found on Unsophisticook.

I put a dozen eggs in a muffin tin and put them in a 325 degree preheated oven. I cooked them for 30 minutes.


A little heads up, when they are done they have little brown spots on them. They come off immediately when you put them in the ice water.

Or you can skip the ice water step and let them rest for about 20 minutes. Then when you dye them the brown spots will also come off then.

They are perfectly done. Creamy, yet cooked through.

YUM.


I loved cooking eggs this way, I didn't have to heat up any water or have any pots out. I also didn't have to worry about the shells cracking.
