Eating My Feelings

Boy do I wish that my feelings asked for spinach, salmon, broccoli, or something else healthy. A crazy busy week (last week) with an even more crazy brought on by being cooped up in our house due to snow then add having to type this post three different times because our computer was having problems, and my feelings could only be satisfied by something warm, light, deep-fried, and oh yeah, covered in cinnamon sugar. Thank you for answering my desperate plea homemade donuty goodness.

Next week when my feelings are even more out of whack because my jeans won't fit...I shant be calling you...don't be mad I will always love you.



Homemade Donuts aka feeling-fixer-upper

4 t active yeast
1/4 cup warm water*
1 cup warm milk*
*combine liquids in a microwavable container, nuke liquids for 30-60 seconds
3 T sugar
1 stick butter, melted
4 1/2 cups flour
3 eggs

vegetable oil, for frying
cinnamon and sugar mixture

Combine yeast, water, milk, and 1 T sugar in a bowl. Set aside for about 10 minutes. The mixture will start to foam.

Add butter, flour, eggs, and the rest of the sugar to the yeast mixture, then mix until a sticky dough forms. On a lightly floured surface, knead the dough to bring it together. Place dough in an oiled bowl, cover with a towel and set aside in a warm place for 45 minutes or until doubled in size.

Knead the dough on a lightly floured surface for about 5 minutes, till smooth and elastic.

Roll out the dough until 1/4 inch thick. Use a 3-4 inch diameter circle, I used a cup, to cut out doughnut shape. Use a smaller circle to cut out center. Place on a non stick cooking sheet. After you have all your doughnuts cut out and on the cookie sheet, cover with a towel and set aside in a warm place for about 30 minutes.

Heat oil in saucepan. Cook the doughnuts a few at a time. Cook about 1 minute on each side. Drain briefly on paper towel and then dip in cinnamon sugar mixture.

Now go ahead, happy, cry-face, tired, giggly or anything else ya might be feeling...
and eat up
for tomorrow....

I worked out so hard last week and I didn't loose anything. I think it was all the cookie dough I ate. Now I better work out double hard, cause I think donuts are in my immediate future! I love your recipes! I'm just glad I can work out ;)

By the way Happy early Birthday! You have a few months on me ;)

perfection. You always have the best recipes for baked goods. I couldn't make great bread until I used your recipe. Remember my black donuts? I'll have to try these for sure.
