FROYO week: Strawberry Cheesecake Frozen Yogurt



Hope all my American readers had a glorious 4th. We were busy, busy, busy all day long having fun and celebrating. Hence why my FROYO post is a little late today.

I am sure you will forgive me, because this recipe is AWESOME. I shared this on Somewhat Simple last week and now I am sharing it here. It is YUMMY.

Strawberries are just delightful. Cheesecake, well heck, that is even more delightful. Frozen yogurt, double delightful. You know where I am going with this right? Strawberry Cheesecake Frozen Yogurt...DE-LIGHT-FUL.

When I came up with this recipe, it was one of those recipe "ah-hah" moments. I had some strawberries in the fridge and I had some cream cheese. Then a dessert light bulb went off in my head. AND this is what came from my frozen yogurt epiphany...

 

Yes, it is a yummy as it looks. The good news is that this frozen yogurt is also super easy to make.

Strawberry Cheesecake Frozen Yogurt

Ingredients:
 1 8oz package of cream cheese, softened
 1 tsp vanilla
 juice of half a lemon
 1 32oz container of plain Greek yogurt
 1 can sweetened condensed milk
 1 cup strawberry jam, divided
 1 cup diced strawberries
 crushed graham crackers, for topping

In a large bowl, combine the cream cheese, vanilla, and lemon juice until well mixed. Then mix in the yogurt, sweetened condensed milk and 1/2 cup of jam. Combine until everything is completely incorporated.

Put into your ice cream maker. Once it has been sufficiently frozen according to your specific machine, transfer to a large air-tight storage container. The yogurt should be soft.


At this point gently fold in the cup of strawberries and the other half of strawberry jam. The jam should appeared swirled. Put the frozen yogurt in the air-tight container in the freezer for several hours (until firm) before serving. 


Sprinkle with graham cracker crumbs just before serving. This frozen yogurt will keep. However, the berries will get harder the longer you let it freeze. 


So if it is hot in your neck of the woods like it is hot here... Then I think you need some homemade Strawberry Cheesecake Frozen Yogurt.
