Sweet and Sour Chicken

I LOVE sweet and sour chicken. Always have...always will. I have made this recipe several times and I was surprised to find that I had not shared it yet. As I was searching the blog, I was also surprised at how many times I have used these plates for picturing my food. I think I need to get myself some new white plates.

Anywhoo...back to the recipe.

This is a great recipe that offers super yummy flavor that is both kid and adult friendly. After making it a couple of times I have tweaked it and adapted it slightly and now have it the way I like. Try it out, I am pretty sure you and the kiddos will enjoy it.

Sweet and Sour Chicken 
adapted from Mel's Kitchen Cafe

3-4 boneless, skinless chicken breasts
Salt and pepper
1 cup tapioca starch (found in Asian supermarkets)
2 eggs, beaten
1/4 cup canola oil
¾ cup sugar
4 tablespoons ketchup
½ cup vinegar
1 tablespoon soy sauce
1 teaspoon garlic salt
Cut boneless chicken breasts into chunks. Season with salt and pepper. Dip chicken in cornstarch and then in egg. Fry in a little oil until brown but not cooked through. Place in a single layer in a baking dish. Mix sauce ingredients (below) together and pour over chicken.
Bake for one hour at 325 degrees. Turn chicken every 15 minutes so it is evenly coated with the sauce.  Turn the oven to broil and cook for another 1 1/2 to 2 minutes, just to crisp up the chicken. Serve over rice.

Pshaw. You don't need new white plates. Nobody is lookin' at the plate, they are looking at the yummy food on it. Of course, if you are looking for an excuse then that is another story...
Thanks for the recipe. Looks yummy and Kendra-friendly. Did the Mongolian beef one a few times...HUGE hit for me (Kendra so-so, but she'll have to eat it!)

Man I wish you were close enough to "chef" for me occasionally. Between You and Melissa I seldom have to look for recipies, you do all the hard work of testing them out!!! But I am still stuck cooking and I am down to a record 3 days a week, poor Dad.
