Orange Cloud Jello Salad


I hope that the simple use of the words "Jello Salad" did not lose you. I know Jello salad can be a frightening term. Visions of cheese or carrots suspended helplessly in lime flavored Jello come immediately...and quite terrifying... to mind. I will honestly say I always am a little weary of Jello side dishes. However, there are three that I happily make...and happily eat.

This is one of them and it is one of my favorites.

I got it years ago from a friend. In fact the original recipe card she wrote out for me in her so cute handwriting is still in my collection. What makes this Jello so gosh darn special? Well I will tell you. This Jello is special because of the mixture of lemon cook and serve Jello and regular orange Jello. The combination of those two things make the consistency of this Jello thicker and creamier than regular Jello...just take my word for it that is a good thing.

This Jello salad is perfect for a summer barbecue. I made is just recently for Easter. It is altogether quite lovely. So take my word for it, cast your Jello Salad fears aside and make this recipe. You owe it to Jello.

Orange Cloud Jello Salad 

2 3oz pkgs of lemon cook and serve Jello
2 3oz pkgs of orange Jello
1 1/2 cups sugar
frozen whipped topping
1 can mandarin oranges, drained

Combine lemon Jello mix, sugar and 4 cups of water in a saucepan. Warm on med high heat.

At the same time begin to heat 3 cups of water in a separate saucepan.

Stir lemon mixture constantly, until it starts to thicken. It will look similar to meringue pie filling. Remove from heat.

When other water is boiling, remove from heat and add orange Jello powder until dissolved.

Add orange Jello to the lemon mixture, stirring together.

Pour into a 9x13 pan. Whisk together if necessary...making sure completely combined.

Refrigerate until set. Several hours.

Before serving, top with whipped topping and mandarin orange slices.

I promise you will thank me and will fall in love with Jello again.

My friend brought this same jell-o to Thanksgiving dinner and it was a HUGE hit. In fact she left us with the meager leftovers and I had to fight with my kids over who got the rest, and they never eat leftovers.

Yep, still in Utah. Chad finished his 2nd bachelors degree last year. We've been staying with his bachelor brother since he went back to school..... so ready to get out. We just need to buy a house. I'm also waiting for all my amazing Wrigley friends to move back!!! We had some great times in that little community of ours!
