Cinnamon Churro Chex Mix
Ah Cinnamon. Ah Chex Mix. Ah CHURROS.
Simply delightful.
I knew when I saw this recipe on the ever lovely Pinterest I knew I had to eventually make it. I made two major alterations to her original recipe.
This recipe is fast and yummy. The hardest part of this recipe is simply finding the cinnamon chips. Once you find yourself some of those, well my friends a Churro-riffic, snack-tastic treat of epic proportions is soon yours.

Cinnamon Churro Chex Mix

9 cups rice Chex cereal
3 cups cinnamon chips
1/2 cup powdered sugar
1/4 cup granulated sugar
1 1/2 tsp ground cinnamon
Pour Chex cereal into a bowl. Set aside. Combine sugars and cinnamon in another small bowl. Set aside.
In a microwavable bowl, melt the cinnamon chips. Heat for 1 minute then stir. Heat for an additional 30 seconds. Stir. Continue with additional 30 seconds until completely melted. Pour melted cinnamon chips over the cereal. Stir until cereal is well coated.
Sprinkle with half of the cinnamon sugar mixture. Toss to coat. Pour out the cereal onto a cookie sheet. Continue to sprinkle and toss the cereal with the rest of the cinnamon sugar mixture.
Now go ahead and snack away!

What are cinnamon chips? I feel dumb.
Tamie and Melissa...cinnamon chips are tricky to find. Sometimes (seasonally)Toll House makes some and you can find them in stores.
I had trouble finding them and finally got them at a specialty baking store near where I live.
My advice...once you find them, stock up a bit :). Use them once and then you realize how many things cinnamon chips can go in.

Ok, I have questions. I'd like to know why you made the alterations you did? Also, I had a lot of trouble with the chips coming close to seizing. It was really hard to work with them. I'm wondering what I'm doing wrong. Any suggestions? I was able to salvage the recipe, and my kids enjoyed them for an afterschool snack. Just didn't come together smoothly.

I omitted the butter because is was a minimal amount and my chips were more "buttery" (for a better word) than the Tollhouse ones.
Since I omitted the butter and my chips were a small size I added more chips because the originally called for amount did not cover the cereal.
As for the chips seizing...one of the factors could be if it was heated up too fast or too long. It could also be the type of chips...if you used the Tollhouse ones the butter might help.
For me, traditionally it is the first reason. The chips just heat up too fast and too long.

Awesome recipe, and I agree...no need for the butter. Used Hershey's brand cin chips and they melted perfectly. Yum!!

These look delicious - I love churros, but I don't love the work of deep frying and oil everywhere. I can't wait to try these. The original muddy buddies are so addicting, I'm sure these are too!

We have peanut and nut allergies, so I was thrilled to see this recipe, while a similar idea to the traditional puppy chow, it is something unique and all it's own. Can't wait to try it out!
I am so glad this recipe is good for allergies...I don't have any of those issues with my boys, so I wasn't thinking about it, but I am glad that it offers something yummy for those with allergies!

A great trick that I've used when making Muddy Buddies (a very similar chocolatey version of this) is to put your cereal in a big plastic bag, pour the chocolate over it, keep as much air in it as possible and shake it! I even add my powdered sugar right into the bag. So much less messy! I didn't even realize that they made cinnamon chips. I'm allergic to gluten, and churros are one of the things I miss most! So excited to see if this fills my flavor cravings!

Any idea on how long the shelf life for these are? I was thinking of sending some to a friend in the mail.
I stored my left over mix in a gallon ziploc bag and it lasted for about 2 weeks. By the end of the 2 weeks it was a little drier, but still pretty tasty.
I found the cinnamon chips in bulk at our local Amish store ( I live in the mitten state). Some of the bigger Amish chain stores are E&S and Forks.
I can't find the cinnamon chips at Walmart. Could they possibly be a seasonal item?

Cinnamon Chips at Walmart are seasonal. I have found that people have the most luck finding them at specialty baking stores year round.
I have never tried substituting white chocolate chips and cinnamon flavoring. I would love to know if someone tries it and it works!

Looks like Walmart does not carry them anymore. Luckily for me I found them at Winn Dixie.
Just used white chocolate chips (couldn't find cinnamon chips anywhere!!) I also substituted with cinnamon oat squares instead of rice squares. We think it turned out great! No complaining from my family. I did add an extra tsp of cinnamon to the sugar mixture as well. Yum!

This was my third time making it. I thought it was a little too much cinnamon. So, this time I used 2 C of the cinnamon chips and a mixture of butterscotch and white chocolate chips for the last cup. Adding these other chips in made the mixture a bit more creamy and easier to mix with the chex. I changed nothing in the sugar mixture. It came out perfect!
How many cups are in a 10 oz. package? I want to buy some off the Hershey's website, but I don't know how many 10 oz. bags to order.

Cups in a bag will vary depending on brand, type of chips, and so on.
My Hershey milk chocolate chip bag is 11.5 oz and measures 2 cups. I would guess that their cinnamon chip bag should be close to that.

@amanda_v- on the Hershey website look at the picture of the bag of chips. There is a measuring cup on it that says 1 1/2 C. Hope that helps ;)

You are in luck then! These do not have nuts. AND if you use Rice Chex then there is no wheat.
I am not sure if the cinnamon chips have soy, but I don't think they do. You will have to check whatever brand you use.
I'm so excited to finally try this! After months of looking I finally found the cinnamon chips at Safeway yesterday! Now all I have to do is go buy myself some chex!

I made these, I thought they were a little too sweet. My kids loved them! I think next time I will use 1 1/2 or 2 cups of the cinnamon chips instead. I ended up adding another 3 or 4 cups of plain cereal to decrease the sweetness.

SO happy you enjoyed this mix. I find that the best way to keep them is either in a gallon freezer ziploc bag OR an airtight container.
We never have ours around for that long...hahaha...pretty much because we have no self control.
Just finished making a batch of this because I just loooove churros! It turned out pretty good. I used only 2 cups of cinnamon chips (mainly because that was about all that was in the bag I bought from the local Amish market), but it still was more than enough to cover all of the cereal. When I do this again, I'll probably add more cinnamon to the coating because the chips themselves weren't very cinnamon-y to me. I might decrease the powdered sugar as well since every churro I've ever eaten has not had powdered sugar and it just seems to make them a bit too sweet to me. Otherwise, it is yummy!

Jennifer! That is sad! Bags of cinnamon chips will vary. Mine comes from a specialty baking store and has almost 6 cups in the bag.

I could only find one bag of cinnamon chips so I subbed in a bag of white chocolate chips. It's super good!!

A good substitution is white chocolate chips and some ground cinnamon. Play with the ratios of cinnamon till you get a flavor you like.

We made it with chocolate chips instead... same amount of cinnamon, AWESOME... still tasted like churro a lot of times you dip churros in chocolate anyway!! Thanks!!

The only place I have found the cinnamon chips has been Hershey's brand at Walmart, and I stock up on them like you mentioned.

Has anyone actually tried this recipe? My cinnamon chips turned all crumbly when I melted them, which caused them not to coat the Chex properly. The proportion of sugar to cover the Chex was off- not nearly enough sugar to coat! The flavor turned out nicely, but they are so ugly and nothing like the picture.
